Recipe Attempts

I’ve been meaning to try some of the recipes in the Eating Purely Cookbook since I got it for Christmas. This week I have tried three thus far and here’s how they turned out.

  1. Pan Seared Oatmeal Sticks

The potential for this recipe is huge, but they ended as a total fail (probably on my part). They’re essentially supposed to be overnight oats in bar form that you pan sear and serve almost like pancakes.

For starters, I think my oats-to-milk ratio was off because the morning I took them out of the fridge I could tell they were too runny and would not stay together when moved to the hot pan. Sure enough I was right, and I ended up shaping them into patties so they’d stay together better. They stuck to the pan too much, and I’m not sure I cooked them enough.

I ended up layering three oatmeal patties and topped them with maple syrup, some drizzled almond butter, and fresh fruit. Here’s my final product versus what Elizabeth’s look like…

 

2. Kale, Brussel Sprout and Mushroom Tacos

These were fairly easy to make – just sautee all the veggies in a pan until they’re cooked to your liking (I liked mine more on the crispy side). Toast your corn tortillas, add some beans and then top each taco with your veggie mix. Instead of creating the pineapple guacamole she recommends, I just added some mashed avocado on mine.

Overall these tacos were pretty good, but could’ve used a lot more flavor or seasoning. I’ll remember that for next time.

3. Cauliflower, Chickpea, and Tomato Curry

Again the potential for this recipe was huge, but as I followed the instructions, the ratios seemed all off. I should’ve cooked the onions and cauliflower more so they were crisper. Then there was way too much coconut milk, which took away from the curry flavor so I removed about a cup of coconut milk liquid after I had mixed everything together. The recipe could’ve used more tomatoes and I actually added two more tablespoons of red curry paste, and I don’t even like spicy food…

After I made my adjustments and served the curry over rice, again this recipe needed more flavor and I’m so glad I took out the excess coconut milk because it would’ve been way more water-y and coconut-y flavored.

I hope to try more of Elizabeth’s recipes from this cookbook, but I must say I’m a little disappointed at how the first few turned out. I also wish that with each recipe, Elizabeth would include a serving size and total time to help put in perspective how much food you’re making and how long the process is.
